Pick the limit you can live with. The country is too large for a “best of” week.
The question that works
Ask what you want your days to be made of, and what you will not enjoy. Then match the region. The notes below are editorial groupings of places the Tourism Authority of Thailand and UNESCO describe. They are not scores.
NorthChiang Mai and Chiang Rai if you want temples, walking streets, and hills, and you can bear a day that is mostly a ride. You will not swim in the sea.
BangkokBangkok if the trip starts or ends on a long-haul flight, or if markets and major temples are the aim. It is a poor beach. Pair it with Pattaya only when the Gulf has to stay close to the capital.
AndamanPhuket, Krabi, Koh Phi Phi, or Koh Lanta when the trip is the coast and a boat can be cancelled without ruining it. Read the swim-flag and the monsoon notes before you stack islands.
GulfKoh Samui, Koh Phangan, and Koh Tao when you want a ferry chain and, on Phangan, a clear yes or no to the party. Do not glue them to Phi Phi.
WestKanchanaburi when you want a river, a war memorial, and a waterfall within reach of Bangkok, and you will not also do Ayutthaya the same day.
IsanIsan when Khmer-period Phimai, Khao Yai, or Ban Chiang is the reason, and you accept road or rail time. It is the wrong region for a first beach holiday.
A week, honestly
One region, or two if the second is Bangkok plus one other. Bangkok and Phuket is a full week. Bangkok, Ayutthaya, and Sukhothai is a full week. Chiang Mai and Chiang Rai is a full week. Three coasts is not a week. It is three trips sharing a suitcase.
Before you book the fare
Name the overnight bases, not just the provinces.
Put the transfer on its own day.
Read Weather for the coast or the mountain you chose.
Then read Getting around for who actually sells the train or the boat.
